Homemade or just quality ranch is a decent enough flavor, most commercial ranches have just become far sweeter then was originally intended. As expected, you can't answer. And to answer your question, the textural difference is about it. The best chicken tender I've had is miles ahead in flavor and texture than the best katsu chicken cutlet I've had. Just because a food can be produced in high quantity, low quality batches doesn't mean it isn't capable of being 'gourmet'.
