American football evolved from a combination of rugby and soccer(Euro-football). It was less "copying" the name, and more keeping it even as the game evolved.
The term "soccer" was actually a UK invention, and was their thing until the ‘70s.

I've actually never heard an American call it Gridiron. Even when we are trying to distinguish it from the other football, we call it American Football. Its like if Americans insisted on calling your football "Association Football". Also the name is because it evolved from rugby, which evolved from your football

Various sports had been called "football" for hundreds of years before the invention of Soccer in 1863. Very few of these games involved kicking a ball with your feet. The term refers to the fact that the game is played on foot (by peasants) as opposed to on horseback by nobles like polo.
