Where I'm from, we just call them sushi bowls to begin with. It's really in the US that the poke bowls have taken up the mantle of the sushi bowl by also offering raw salmon among other sushi ingredients and Japanese soy sauce over rice

The only time I've paid more for sushi is if I go to a very fancy place that has zero lunch specials or deals. Most sushi places I've been have an all you can eat or some lunch special pricing on like 3-4 rolls.
