Water based. I'm talking about the juice from the fruit. When you bite into fruit and chew it you effectively juice it partially. That juice mixes with chocolate in your mouth and the chocolate seizes up since chocolate is oil based. The resulting texture from the chocolate is terrible. This has nothing to do with the taste of fruit. I love fruit, and even watermelon (probably the least concentrated fruit) doesn't really taste like water.

It needs to be from the fridge so the fruit is crisp and cold and the chocolate has a good snap to it

It's not the taste of fruit I have an issue with. It's the texture created when you eat these two things together. I love fruit. Chocolate is alright. Together they are an abominable amalgamation.

Maybe, but other chocolate combinations I really enjoy. I love s'mores and reese's. I like chocolate chip cookies and protein bars with chocolate make them better. I'm not a huge fan of chocolate on its own, and I'd never reach for just a bar of chocolate, but chocolate does complement a lot of flavors well.

Okay I do concede. I'm not a banana guy, but I can see this working well. Not enough water in a banana to seize the chocolate. Pretty much every fruit other than bananas.

I agree. Especially with strawberries, the chocolate tastes very waxy to me. If it's in the format of a fondue, I can get on board because the chocolate is warm and melty.

Agreed. Freeze-dried fruits + chocolate? Godly. Fresh and juicy fruit + chocolate? Absolutely terrible. Fruit juice prevents the chocolate from coating the taste buds, as water and fat don't mix well, so it always ends up tasting waxy and disgusting. That is also the reason I hate chocolates with liquors inside - you can only taste the booze and that disgusting hard sugary crust, not the chocolate. At that point - why not just drink some booze and not waste the chocolate? Bananas are kind of an exception, as they aren't "juicy" even when fresh, so they are fine.

Apples, bananas, and strawberries taste fantastic in freshly melted chocolate fondue. A lot of the pre made nonsense isn't even chocolate and is just a vegetable oil concoction.

In general, I don't think chocolate pairs well with most fruit. The bitterness in the chocolate clashes with the acidity of the fruit.

I'm okay with chocolate dipped strawberries, only if everything is super fresh and high quality. I draw the line at fruit being in other desserts. Why would I want hot mushy apple slices covered in sugar and pastry when I can just eat an apple?
