When I ask for it well done though, everyone around me assumes I like to eat leather and uses this as an argument. 90% of well done critics also assume that every well done steak has no juice or tenderness left.

But you're being disingenuous. You know what people mean when they hate on well done. So because others haven't had a decent well done steak, the steak OP is describing is not a relevant counter point? I don't understand what's disingenuous about that. And boo on you for calling others pretentious based on their opinion, but not your own. Because OP's opinion isn't pretentious, it's literally just "everyone likes their steak cooked a different way and that should be okay." You're making a false equivalency here by equating it to rare steak enjoyers that, even by your account, hate on well done steak.
