Amen. Go-go no weight limit cheats in Skyrim. Inventory management is not a compelling gameplay mechanic to me.

That I can get, I like when games adds some gameplay settings for some things, like timers and carry limits, but if you can onehit everyone then it's just boring, at least if the game wasn't made for that in mind.

Fair, but then again: you don't need to set the strings like that. If someone comes home from a tough day of work and wants to have some fun in the world of Elden Ring then it should be totally up to them to turn down the difficulty and just go berserk on anything.

If that's genuinely how you enjoy games like MH SP, then sure. But I doubt it, I think this is a resilience issue. Losing in these games costs you nothing and teaches you what you're doing wrong. Not every encounter has to be a win and accepting that can be more satisfying long term. By enabling the cheats when you lose you're robbing yourself of the satisfaction of overcoming the challenge.

Overcoming greater and greater challenges is very addictive. For that reason I self impose challenges in games all the time, like beating Elden Ring with a level 1 character

You do whatever you want in solo/offline, as long as you don't play online and ruin other people's fun. Not only in PvP games but also in coop games like MH.

A game where you know you're going to win isn't a game, it's a checklist. Some singleplayer games can make that checklist fun through story or feedback loops, but it's still a worse experience.
