It's just what's trendy not. Whites and greys and then add color with accessories. It'll shift eventually. Watch some home renovations shows that have been around for 10+ years and you'll see how much the style has changed from when they started. It's already shifting especially for kitchens and bathrooms. Grey wood floors are also trending away for more natural wood floors.

Having all-white has kind of always been a status symbol throughout centuries; you can afford to rebuy anything that gets dirty, pay for continual cleaning services, afford the time to clean things yourself, or show that your occupation doesn't require you to get dirty. Today, the all-white interior of homes I feel could also come from having a solid bright base to start with for the sellers or renters of these homes & apartments. Anyone can add color to their home with accents & decor, but that's an artistic skill that not everyone has, even influencers.

It shows you're rich enough not to need to have lots of things, because you can order stuff, and that you probably have someone who can keep your place clean for you, or that you are wealthy enough that you don't have to work 9-5 so you can keep your place really clean yourself.
